Lemon Meringue Filled Cookies

 

Method:

1. Beat the sugar with the butter

2. Add the egg and beat

3. Add the flour 

4. Add the callebaut lemon chocolate, white chocolate drops, lemon zest and lime

5. Weigh and separate the cookie dough into 65g balls

6. Temper the lemon chocolate and pipe 20g into a disc silicone mould and leave to set

7. Flatten out the cookie in your hands and place the lemon discs into the centre and enrobe the cookie mix around it

8. Place on a silicone mat on a baking tray and bake for 9-10 minutes at 170c

9. Whilst the cookies are baking, temper the white chocolate and fill a piping bag

10. Once the cookies have cooled down, drizzle on top of the cookie then sprinkle on meringue drops to decorate

Unsalted butter 125g
Caster sugar 225g
Egg 50g
Self-raising flour 225g
Lime zest 1g
Lemon zest 100g
Callebaut Chocolate Lemon Callets 100g
Callebaut Bake Stable Chocolate Chunks
