This week Ollie Dabbous, Executive Chef and owner at Hide, the critically acclaimed Mayfair restaurant, spoke to Woods Foodservice about what inspires his love of food.

What would you say is the most defining
moment in your career?

Opening Dabbous, my first restaurant, was life-changing. What we created from such finite resources: the near bankruptcy before even opening followed by such success is something I will never forget. Also, if I hadn’t set up Dabbous, I wouldn’t now be at Hide.

What inspired you to become a chef?

A love of eating. If you love food, then picking up a pan is only a natural progression.

What piece of golden advice would you give to
anyone in the industry who wants to be successful?

Taste everything. Question everything. Work harder than your competitors. Be yourself. Keep it simple. Remember that you are only as good as your last service.

What ingredients / trends will be big in 2019?

I’m not one for food trends: something is either delicious or it isn’t.
