We spoke to Chelsie and Kristelle, owners of Blondies Kitchen, who shared their chef icons, most defining moment of their careers and the importance of persistence.

What would you say are the most defining moments in your career to date?

Our most defining moment was securing a permanent spot in Selfridges food hall back in 2017. It was a dream come true for us.     

What inspired you to become a chef?

Kristelle – I’ve always loved feeding people so I thought the only way to do this successfully is to train to become a proper chef!

Chelsie – Growing up watching Nigella and Jamie Oliver on the TV got me into cooking. I’ve always been a massive foodie so I decided to turn my passion for eating into cooking. 

What piece of golden advice would you give to anyone in the industry who wants to be successful?

Don’t give up, persistence is key to success. If you are passionate, believe in yourself, and work hard, you will succeed. No-one became successful overnight so just remember that. 

Any favourite ingredients at the moment or menu trends you are really enjoying?

We’re making the most of the last of the summer season berries! It won’t be long before strawberries don’t quite taste the same anymore. 

Favourite dish on the menu that uses ingredients from Woods?

Our ‘Get Stuffed’ Oreo cookie is a firm menu favourite and has been on the menu since day one. We always use flour, sugars, vanilla and Oreos from Woods.
