We spoke to Lucas Kus, Head of Food at Beer + Burger Store, on his career so far and what inspired him to become a chef.

What would you say is the most defining moment in your career?

It is definitely moving to London –  it’s a city of big flavours, diversity and great chefs.

What inspired you to become a chef?

Being a chef allows me to travel and be creative. It all started as a new challenge in my life, and 20+ years later, I’m still loving it!

What piece of golden advice would you give to anyone in the industry who wants to be successful?

A chef’s job is like marmite, love it or hate it. You got to give 100% and challenge yourself constantly. Work hard, never stop learning and enjoy it.

Any favourite ingredients at the moment or menu trends you are really enjoying?

I always follow the seasons to get the best ingredients as possible. For example, with all cabbages, root veg, mushrooms and wild game meat, winter is the best season to cook comforting and hearty food.

Favourite dish on the menu that uses an ingredient / ingredients from Woods?

It changes all the time, but right now it is quinoa. We use it in our quinoa and cep vegan burger which we serve with smoky aubergine goop and pickled daikon. All ingredients are from Woods.
