We spoke to Matt Larcombe, Head Chef at The Victoria Oxshott, who shared his golden piece of advice and discusses the most defining moment of his career to date.

What would you say are the most defining moments in your career to date?

For me it has to be working for The Fat Duck group and being around the chefs there. They were all so inspiring, and it had such a family atmosphere. Ashley Palmer-Watts and Jonny Lake were perhaps the best chefs I have ever worked with, and their processes and ideas and the way of thinking was amazing.

What inspired you to become a chef?

Since I was a child, I always wanted to do it. I never wanted to do anything else.

What piece of golden advice would you give to anyone in the industry who wants to be successful?

I think to learn as much as you can, and never forget consistency is the key ingredient to any success. 

Also, keep trying and keep working hard and you will get there one day.
