We spoke to Richard O Connell, Founder of Seasoned Consultancy, on his career so far and what inspired him to become a chef.

What would you say is the most defining moment in your career?

For me, there are two. Working for Gordon Campbell Gray at One Aldwych as his vision was superb, as well as spending years with Tom Aikens – the best chef I have ever worked for.

What inspired you to become a chef?

I was pretty restless at school so spending time in a high-paced environment was ideal for me. There is no better compliment than having people say your food was great.

What piece of golden advice would you give to anyone in the industry who wants to be successful?

Having a mentor that you can aspire to or turn to is crucial – someone who will guide you and introduce you to the correct path is very important. 

Any favourite ingredients at the moment or menu trends you are really enjoying?

I’m loving miso and all things fusion at the minute, it seems you can put these ingredients with anything and it turns out delicious. 

Favourite dish on the menu that uses an ingredient / ingredients from Woods?

Braised Lake district Pork belly, miso and soya glaze, peanut crumble.
