We spoke to Joginder Dham, Head Chef at D&D’s New St Warehouse, who shared his first memories of food, most defining moment of his career and best piece of advice.

What would you say are the most defining moments in your career to date?

My first head chef role at Butlers Wharf Chop House, it was a dream come true moment for me!

What inspired you to become a chef?

As a young kid whenever we went to eat out for any sort of celebration I really enjoyed the atmosphere and buzz in the restaurants and always found it so intriguing.

What piece of golden advice would you give to anyone in the industry who wants to be successful?

Stay focused.  

Any favourite ingredients at the moment or menu trends you are really enjoying?

Menu here at New Street Grill is very seasonal so really can’t pick one, however in summer I love Asparagus, broad beans, peas, tomatoes, and in cold winters I love roast Celeriac, beetroots, salsify.   

Favourite dish on the menu that uses ingredients from Woods?

I love Josper grilled tomahawk with béarnaise and triple cooked chips from Woods.
