Our Couverture Room is maintained at an ideal temperature range of 15-18 degrees. This precise control is crucial to protecting the chocolates' delicate flavour, texture, and appearance. Temperatures outside this range can cause blooming, a condition where the cocoa butter rises to the surface, creating unsightly grey streaks and compromising the texture. By keeping the room cool, we ensure that every piece of chocolate retains its smooth, glossy finish and rich, satisfying taste.
Humidity is another critical factor in chocolate storage. In our Couverture Room, we maintain humidity levels below 55%. High humidity can lead to moisture absorption, which can affect the texture and appearance of chocolates, causing them to become sticky or develop sugar bloom. By keeping the humidity low, we ensure that our chocolates remain in perfect condition, preserving their integrity and extending their shelf life.
Cocoa butter, a key ingredient in chocolate, has a unique ability to absorb surrounding flavours and odours. To prevent any unwanted taste alterations, our chocolate is stored separately in our Couverture Room. This isolation ensures that the chocolate remains pure and uncontaminated, allowing the true flavours of our chocolate to shine through in every bite.
