From Berkshire to BiBi, Chet’s journey is anything but ordinary — armed with degrees from UCL and a DPhil from Oxford, he swapped the lab for the kitchen, working at some of the UK’s most iconic restaurants including L’Enclume and Moor Hall.
In 2021, he opened Bibi restaurant to critical acclaim — a heartfelt tribute to his grandmothers, weaving together his Indian heritage with progressive techniques.

From Cornwall to Knightsbridge, Tom’s journey has been remarkable — from training under Nathan Outlaw to leading Outlaw’s at The Capital, where he retained its Michelin star. In 2018, he launched his debut restaurant Cornerstone in Hackney Wick, which went on to win multiple awards and earn a Michelin star, cementing his place as one of the UK’s most exciting chefs.
Since then, Tom has continued to push boundaries: opening Pearly Queen in Shoreditch (2023), the upcoming Tom Brown at The Capital in Knightsbridge (2025), and most recently ISLAND at Mare Street Market in London’s King’s Cross, alongside Chef Brad Carter.

Adam’s culinary philosophy is rooted deeply in product first, craft and technique second, and balance and harmony third, all wrapped in his love for classical French cookery—a mastery developed over decades.
At Trinity, where he’s proudly held a Michelin star for 10 years, Adam embodies consistency, innovation, and a relentless focus on putting the guest at the heart of every dish.
Starting with classical training at Claridge’s and The Square, Adam’s journey has shaped a modern British cuisine approach that honours seasonality and precision.
Join us to witness a master at work who, after 35 years in the industry, still lives and breathes his passion for great ingredients and the joy of cooking.
